Eggless omelette??? You might be wondering what you are reading.
Well, friends I have been doing this eggless tomato omelette after I had in one of the hotel. I normally cook this for breakfast. My hubby loves it so much that he simply eats it plain.
I once prepared it in my Goa home and they all also loved it a lot. My dad is a pure-vegetarian and he won't even eat egg's. He does not even eat cake as cake's normally are made up of eggs. He loved the tomato omelette which I made. Not only this much, I taught my mom how to prepare this eggless omelet for my dad :)
Ingredients:
2-3 tomatoes
2 tablespoon chopped coriander leaves
1 tsp carom / ajwain seeds
1 tsp cumin / jeera seeds
1 tsp turmeric powder
2 cups gram flour / besan
1 tsp cooking soda
2 green chillies
1 tsp salt
Procedure:
Chop tomatoes and green chillies.
Make a smooth batter out of besan by adding 1 cup water. Make sure there are no lumps. If required add more water. Do not make a thick batter.
Add all the other ingredients mentioned above to the batter.
Spread oil on tawa and when it heats spread batter and fry on both sides.

In South of France, a similar kind of dish is prepared with besan and it is called socca, but it is served plain... I really like the spices and tomatoes in your recipe!
