Thought a little to try some innovation with idli's. I tried adding palak paste. The taste was good and the idli's turned out soft and fluffy. My little one had one idli and I felt very happy that she had this healthy palak idli. This is another recipe to make your fussy toddler eat vegetables.
Ingredients:
1 cup rice
1/4 cup urad dal / black gram dal
1 bunch fresh palak leaves
1/4 tsp baking soda
1 tablespoon salt
Procedure:
Soak rice and urad dal for 6-8 hrs.
Mix and grind coarsely.
Add soda and leave it for 4-6 hrs for fermentation.
Add salt and mix properly.
Boil the palak leaves and grind them into a paste after it cools.
Mix this in the idli batter and mix properly.
In a Idli cooker, properly grease the idli tray with ghee and put in required quantity of idli batter.
Let it get steamed for 20 Min's. Do not open the cooker immediately.
Serve them with hot sambar.
