Bombay Pav Bhaji

Bombay Pav Bhaji, the smell of it on the streets of Bombay... Mmmm... Just love it.

I have been prepaing this since the past 5 years and I suddenly thought of posting it on my blog. This Special Pav Bhaji has been my a favorite in my home. My hubby was startled when I prepared this first time for him.
He just loves this dish prepared by me. Even if we go to some hotels, he never orders Pav Bhaji. He says that the best pav bhaji in Bangalore is made by his wife.

There are beautiful memories associated with Pav Bhaji. During my 2nd job, I was sent to Mysore for training. My hubby missed me a lot that time. Once he told his friends, "My wife prepares the best Pav Bhaji." His friend said "Pav Bhaji? That ready mix?." Hubby said "No, she prepares it from scratch. But she is in Mysore and I can get it after 2 and 1/2 months when she is back."

The same smell and the taste which can be found on the streets of Bombay/Mumbai can also be found in Raksha's Kitchen. The veges of your choice can be added and it is a very healthy dish for fussy kids too. The kids won't even come to know about the various veges which have been added to this. Just give it a try once and get drenched into this mouth-watering taste.






Ingredients:
3 medium sized potatoes
2 tomatoes
1 tablespoon ginger garlic paste
1/2 big sized capsicum
1 big finely chopped onion
1 carrot
1/4 cup green peas
Coriander leaves for garnishing
2 tablespoon Everest Pav Bhaji Masala
1 tsp chilly powder
1 tsp turmeric powder
1 pinch of orange food colour
1 tsp Cumin/Jeera powder
6 Pav/Bread

Procedure:
Boil the potatoes. Peel them after they cool down. Grate and keep aside.
Boil the other vegetables and mash them slightly by hand.

In a frying pan or tawa, add 1 tablespoon oil and fry the onions.
Now add ginger-garlic paste and mix.
Add tomatoes and fry till tomatoes become mushy.
Add all the powders and mix properly.
Now add the grated potatoes and the mashed veges and mix properly.
Add 1/2 cup water. If needed add more water.
Keep on mixing and pressing the veges on the tawa with the bhaji presser.
Add a pinch of food colour and salt to taste.
Keep the lid covered and let it get cooked for sometime.
After 5 Min's switch off the gas and garnish it with a blob of butter and coriander leaves.

Apply butter and fry the pav on both sides.
Serve the hot bhaji prepared above with pav, chopped onions and a piece of lemon.
