Today on the occasion of Valentine's day I decided to make something special for my Dear ones. Specially for my 2 little babies. Yes I am talking about my hubby and my baby :) I wish my Mom and my Dad were here in Bangalore with me. The only thing I don't like being in Bangalore, is that I miss my parents. Mumma and Appa, I want to wish you both a very Happy Valentine's Day.
This Valentine's Day I want to thank my hubby for all the love and support he has given to me. Specially in times when I felt very lonely and specially when I felt like as if I had no one to talk to. He was and he is always there for me. I want to thank my baby for being with me always.She is always there to give me a hug and to lift my spirits.
Apart from these 2, I want to thank my sister and my "special" friends for being there forever. They are always there, just a phone call away. I can talk to them for hours together and still they never feel bored. I can share all my happy and sad moments with them, I mean almost everything... and due to all these people I feel that my life is blessed.
I wanted to try something new and something which my hubby had never tasted before. I thought of trying this Rice Phirni with Rose Infused Strawberries. I learnt this dish during Love, Cook and Learn workshop which was sponsored by Four Seasons Wine. I will write a separate post on my experiences learnt during that class soon. Learning this dish from a five star chef was really a good experience. I myself tasted this Phirni there for the first time and fell in love with it instantly.
Today I made it for my hubby and he too loved it. He had 2 glasses of it and told me to prepare it again soon :) The red strawberries in this red rose syrup and white rice Phirni makes is a great dessert for any romantic occasion. In return for this great dessert I received lots of love and appreciation from everyone at my home. When my family became very happy after tasting this new dish prepared for the first time.
Recipe adapted from Love,Cook and Learn workshop.
Ingredients:
Serves 4
For the phirni
1/4 cup Basmati Rice, Pounded to a coarse powder
1/2 litre Full cream milk
2 pinch Cardamom power
3 tablespoon Sugar
For the topping
5-6 Fresh strawberries
Few mint leaves
2 tablespoon Rose Syrup
2 tablespoon Water/Rose water
Procedure:
Boil the milk in a heavy bottom pan, preferably a non-stick pan and add rice powder to it.
Cook on low flame stirring continuously till it gets thickened.
Add the sugar and cardamom powder and continue stirring.
Switch off the gas and transfer the contents to 4 glasses and keep aside.
Let it cool down.
Cut the strawberries into thin slices.
Mix the rose syrup with little water/rose water. Pour it over the strawberries and let it remain for sometime till served.
Now top the phirni with strawberries infused in rose syrup.
Serve with love and win hearts ;)

Looks lovely, Raksha! I have been wanting to make Phirni for sometime now.. I have read recipes that call for soaking the rice before grinding. If i am trying it your way, can i substitute it with rice flour, instead?
