Green Chicken Masala is simple and easy to cook. My Mom taught me this and it turns very very yummy. My Mom's recipe was a simple one. I modified it slightly by adding sauces and some spices. This is very close to Chicken Cafreal that we prepare in Goa. But it is not the actual Chicken Cafreal. It is Green Chicken Masala which is marinated in a rich mix of green gravy and cooked to perfection.
Ingredients:
7-10 pieces of marinated chicken chicken
10 garlic pods finely chopped
2 tablespoon ginger-garlic paste
2 big onions finely chopped
1 tomato finely chopped
2 tablespoon green chili sauce
2 teaspoon soya sauce
1 tablespoon butter
For the gravy:
1 bunch of fresh coriander leaves(chopped along with the stem) or 2 cups chopped coriander leaves
3 green chillies
10-15 pods garlic
1 inch ginger
5 peppercorns
4 tablespoon oil
For the masala:
4-5 peppercorns
2 cloves
1 tsp jeera/cumin seeds
1 inch cinnamon
1/2 tsp coriander seeds
8-10 cashew nuts
For Marination:
Apply 1 tablespoon turmeric, paste made out of 2 tablespoon coriander leaves + 1/2 inch ginger + 4-5 garlic pods, 1/2 cup curds and salt.

Procedure:
Grind the ingredients meant for gravy by adding 1/2 cup water and keep aside.
Dry grind the ingredients meant for masala.
In a kadai, add oil and heat. Then add the chopped onion and fry till it gets pinkish by closing the lid of the kadai. Then add the ginger-garlic paste and fry for 1 minute. Then add the chopped garlic and fry till the raw smell of garlic goes off.
Now add the chopped tomato and fry on low flame by closing the lid of the kadai till the tomato gets mushy.
Then add the ground masala. If it has become sticky, then add a little water(1 tablespoon) to the masala and then add to the kadai.
Now add the sauces.
Stir everything properly. Then add the chicken pieces. Stir for sometime and close the lid of the kadai. After 10 minutes add the gravy to the chicken in kadai. Close the lid and let it get cooked properly. After sometime try to cut open a small piece of chicken while it is getting cooked in the kadai itself. If chicken is cooked properly then you will notice pieces separating easily. Adjust the salt. Add the butter and switch off the gas.
Serve with rice or rotis.
