Simple Cauliflower Capcisum Stir Fry

My husband Mr. MK, has been my biggest inspiration for cooking. He loves home cooked food and he loves whatever I cook. Due to this love, I learnt cooking. Recently, I had visited him during my short trip to California. The day I landed in San Fransisco, he took me to Safeway which is North America's 2nd largest supermarket chain. It which was on the way to our hotel. I was tired due to the journey, but he knows that I love to cook and the first thing that I saw when I landed in USA was Safeway :)

I was astonished. Literally I was astonished at the different varieties and different types of food, sauces, packed meals, breads, fish, meat, chopped veges, ready to eat meals... I mean I could spend my entire day just going through everything there. The best thing that I saw was extra large sized onions. Yup they were as big as coconuts. I could use 2 of them for the entire week. I also liked the large garlic and the quality of the veges available there. Specially the cauliflower. It was white and not a single spot on it. I actually got lost there...

 But my hubby told me to hurry up. So I purchased only simple things along with a pack of tortillas. And we went to our hotel suite. It had a wonderful kitchen too. I wish my own kitchen was like that. I made the simple cauliflower capsicum stir fry and quickly fried some tortillas.  In USA, since we get most of the things ready-made time to cook is very less. Do try this simple stir fry. I bet you will really say that time to cook it was less.



Ingredients:
1 medium sized onion finely chopped
1 medium sized tomato finely chopped
1 cup chopped capsicum
1 tablespoon chopped garlic/1/2 tablespoon garlic paste
2-3 cups chopped cauliflower / 1/2 medium sized cauliflower
1 tsp turmeric powder
1 tsp chili powder
1/2 to 1 cup water

Procedure:
In a wok/frying pan/kadai, add 3-4 tablespoon oil. Once it gets heated, add chopped onion and fry till it gets pinkish. Then add the chopped garlic and saute for 1 min.
Now add the chopped tomato and fry till the tomato gets mushy.
Following this add the chopped capsicum and fry for 10 Min's.
Now add the chilly and turmeric powders and mix properly.
Add the chopped cauliflower and mix everything nicely.
Add 1/2 cup water and simmer till the cauliflower gets cooked. The cauliflower will turn a bit soft on cooking.
Taste and adjust the salt.
Garnish with chopped cilantro leaves and serve hot with bread, rice or rotis/tortillas.
