Suddenly I realized that I can actually experiment a lot more in my kitchen.Thanks to all the contests announced at IFBM. Since the last five days I have been experimenting with several things and I found out the hidden talent in me. Today just by simple observation I found that I can make a great drink with tender coconut.
Everyday after lunch, in my office I go and drink tender coconut water. Today there were some guys who were drinking tender coconut water and they ordered it with a dash of lemon. This was something I saw for the first time. I realized that we can do a lot of things with tender coconut. Immediately after reaching home, I thought of experimenting and I mixed, cucumber juice with tender coconut water along with lemon juice. At first I was wondering what the taste would be like. I just sipped it and again and just loved it.The outcome was actually amazing.
Ingredients: Serves: 1
- 1 and 1/2 cups peeled and chopped cucumber
- Juice from 1/2 lemon
- 1 cup tender coconut water
- 1 tablespoon sugar
For Garnish:
- 4-5 mint leaves
- Ice cubes
- Cucumber peel
Procedure:
- Puree the chopped cucumber in a blender. Strain the puree through a sieve. Discard the pulp and retain the juice.
- Mix tender coconut water with the cucumber juice.
- Add lemon juice. Mix all the juices.
- Add sugar and stir well till sugar dissolves.
- Garnish with mint leaves, ice cubes and cucumber peel.
