Ridge Gourd fry with rava/semolina is very simple to prepare. It turns delicious and since ridge gourd is high in water content, you can feel it when you bite into the juicy ridge gourd. It tastes slightly sweet and juicy but since you coat it with rava and spices it just turns mouth-watering. Kids too love this as it is slightly sweet to taste.



In Goa, we fry several types of veges with rava. That is the reason why you see lot of rava fried recipes here. In Goa, we have veg days and non-veg days. On Non-veg days we eat fish and rava fry fish is always on the menu. On veg days, rava fried veges are the alternative and hence these rava fried varieties got invented in Goa. Ingredients:                                        Serves: 4-6, Prep. Time: 20 Min's
For frying
1 Ridge gourd
1 tsp. chili powder
1 tsp. turmeric powder
¼ tsp. salt
Oil for frying

For the coating
½ cup rava/semolina
¼ cup rice flour(optional)
1/2 tsp. chili powder
¼ tsp. salt


Procedure:
Step 1:
Wash the ridge gourd and peel it using a peeler. I used Tupperware peeler which is very easy and convenient to use.
After peeling slice the ridge gourd into 1/4 inch slices.
Apply chilly powder, turmeric powder and salt to the ridge gourd and keep aside for 5-10 Min's(quantity has been mentioned in "For Frying" section).

Step 2:
Mix rava, rice flour, chilly powder and salt and keep aside.
Rice flour is optional, if you don't have it handy, just use rava.

Step 3:
Coat the ridge gourd in rava.

Step 4:
Now take the frying pan, heat it and spread 1 tbsp. oil on it.

Step 5:
Arrange the rava coated ridge gourd on the frying pan one by one.

Step 6:
Spread 1-2 tablespoon oil on top of the rava coated ridge gourd. Fry by covering the frying pan. In between sprinkle 1 tsp. water over the ridge gourd to keep them moist.

Step 7:
After 10 Min's, flip to the other side and fry for another 10 Min's.

Step 8:
Check whether the ridge gourd are cooked by poking in the center of the ridge gourd with a knife. If ridge gourd is soft and it gets cut easily then it’s done. Also the sides with shrink indicating that the ridge gourd is cooked.
