Eggless Dates Cake

Today I wanna share a cake recipe with you all. It's a Dates cake and it's eggless too. This recipe has been shared by my daughters friends Mom with me via whatsapp. It's fun to exchange recipes with Mom's. When I sent her the picture of the baked cake, she was thrilled.


I packed the cake in my daughter's snack box. My daughter took it too her field trip and shared the cake with other kids. They had a good time.Since I had all the ingredients at home, it did not take much time for me to bake this cake.


The cake is eggless and can be had on any day of the week. It is made up of dates and is very healthy as dates are rich in iron. I have loaded the cake with crushed almonds too. The cake was spongy and mellow.

Ingredients:                                                      Prep. Time: 60 Min's, Serves: 5
1 cup all purpose flour/maida
18 dates
3/4 cup milk
3/4 cup granulated/powdered sugar
1/2 cup oil
1 tsp baking soda
10 almonds

Procedure:
Soak the dates in little warm milk and keep aside to make them soft for 30 Min's.
Add sugar, milk and oil in a mixing bowl and stir until sugar gets dissolved.
Keep aside.

Sieve maida with baking soda twice.

De-seed the dates and grind them to a fine pasta.
Now add the dates paste to the milk and sugar mixture and mix well.
Slowly add maida to this mixture and mix well.

Add chopped almonds and stir everything well.
Line the baking pan with butter and dust it with little maida. Dust the excess maida out of the pan, this will ensure that your cake does not stick to the pan. You can also line the baking pan with parchment paper.
Now pour the cake mixture on the coated pan and slightly shake the pan to ensure even spreading of the batter.
Pre-heat the OTG for 10 Min's at 175C.
Bake for 40 Min's at 175C.

After 40 Min's insert a tooth-pick at the center of the cake. If the tooth-pick comes out clean, it means that the cake is baked well.

Note: The cake that I baked has developed cracks. You can bake the cake at a lower temperature and in a wider baking pan, this will help the cake not to develop cracks.
