Today’s dish is a totally new innovation. This dish is another successful attempt at allowing my pillar of strength “my hubby” in the kitchen. From innovating software products and getting multiple US Patents on his innovations, he is helping me create yummy recipes in my kitchen now. Some of his cooking innovations include the
yummy mango dosa,
banana fritters in rabdi,
bachelor shrimps with green peas stir fry and
rava fried bitter gourd. This post is completely dedicated to him and his innovation “Stuffed Jackfruit”.
BTW, I have always told you guys that I learnt cooking from my hubby and mom. Thought mom taught me the basics, it was hubby who actually gave me a kitchen and allowed me to experiment there. He tasted each and everything that I cooked, even if it was burnt. Believe me. He is the best critic and his feedback helped me to improve my cooking skills.
Since he ate the worst food in hostel at KREC Suratkal, he valued home cooked food. He always tells me, that the best food is simple dal and rice and if he gets that he is ready to eat it everyday. He hates food that we get in office cafeteria and hence I cook lunch early morning and pack it for all of us to carry to office. Kid also carries lunch to school.
Now coming to today’s recipe. This recipe is made using ripe but firm jackfruit flesh. It is being stuffed with ground grated coconut and some spices. It is then rava coated and is shallow fried. Do try it out.
Ingredients: Prep. Time: 30 Mins, Serves: 4
10 pieces of ripe and firm jackfruit flesh
For stuffing:
4 tablespoon freshly grated coconut
1 cup chopped coriander leaves/6 tablespoon chopped coriander leaves
2 green chilies
1 inch piece of tamarind
4 garlic flakes
3 black pepper corns
2 cloves
½ teaspoon cumin seeds/jeera
¼ teaspoon salt
For coating:
2 tablespoon fine rava/semolina/sooji
1/2 teaspoon red chili powder
1 tablespoon rice flour
¼ teaspoon salt
4 tablespoon oil for shallow frying
Procedure:
1) Grind all the ingredients meant for stuffing into a thick paste by adding ½ cup water. Check salt and adjust accordingly.
2) Cut one end of the jackfruit flesh and discard the seed. Do not cut the entire jackfruit apart.
3) Stuff the ground stuffing inside each jackfruit flesh and keep aside.
4) In a plate mix all the ingredients meant for coating.
5) Heat a tava/griddle/frying pan, spread 2 tablespoon oil on it.
6) Coat each stuffed jackfruit with rava and rice flour mixture and place it on the frying pan.
7) Spread 2 tablespoon oil on the top randomly.
8) Flip the stuffed jackfruits and fry on both sides till they turn brownish.
9) Serve these yummy stuffed jackfruits with chutney or sauce.
10) We loved having them as it is without any condiment.
