After coming home from a tiring day at office, I always get puzzled as to what to cook for dinner. Same thing happened on Wednesday. I was feeling very tired. Wanted to try something quick and easy.
Had a dozen egg's lying my fridge. An idea popped up in mind. Why not blog hop?

The dish was a success in my home. My hubby loves Andhra styled dishes. He really loved this dish too.
Read below to see what I tried.
Ingredients:
3 boiled eggs
1 big onion cut straight
1 tablespoon ginger garlic paste
1 1/2 tsp red chili powder
1 1/2 tsp coriander powder
1/4 tsp turmeric powder
2tsp egg masala
1 big tomato chopped finely
1 sprig curry leaves
1/4 tsp mustard seeds
1/4 cup water
Oil
Salt to taste
Procedure:
De-shell the egg's and cut them into 4 pieces length-wise.
Now heat a kadai/pan and add 1 tablespoon oil. Add mustard seeds and when they flutter add the curry leaves and fry for 1 minute.
Add the onion and fry till it becomes pinkish. Add the ginger garlic paste.
Add tomatoes and let it become a bit mushy.
Now add the powders and mix well.
Add little water( 2-3 tablespoon) and mix well.
The water should not be too much. It should be adjusted to make the gravy semi-dry.
Add salt to taste and mix well.
Now add the eggs and cover them with the gravy.
Cook for another 1 / 2 Min's by keeping it covered.
Garnish with coriander leaves.
Serve hot. Serve with Love !!!
