I am feeling very excited these days. I am very happy that I am going to attend the
Indian Food Bloggers Meet which will be held in Bangalore on 1st and 2nd August 2014. I was the last to register but I feel that I am extremely lucky to get the last slot. I am sure I am going to have a great time there by meeting a lot of food bloggers whom I have met only in the virtual world. This food blogger meet which is first of it's kind is going to be exciting with a lot of events like talks on food blogging, food photography, a masterclass from KitchenAid and lot lot more.
KitchenAid is one of the sponsors for this event and they have organised a contest. That is cooking with Plums. When I read "Plums" I said "WHAT?". I am not a great fan of plums. But as a foodie, I should be able to make a good recipe with any ingredient and when I saw that the prize was a KitchenAid chopper, I felt I should definitely give it a try.
I put on my creativity cap and started thinking. After a lot of thinking, I came up with this innovative recipe which I named - Caramel Pudding With Plums.
The recipe is very close to my heart. That is because, my Mom taught me the caramel pudding recipe when I was just learning to cook. I am feeling good that I mastered it upto perfection. Today I modified this recipe and added plum's to it. I thought of adding plum slices and plum puree to this recipe. I was a bit doubtful regarding the taste and how it will turn up. It was actually an experiment which I ventured upon. I was extremely happy when the pudding turned out great. The mild flavor of coffee, vanilla and plums have got together and brought a very nice and unique taste to the pudding.
Now was the task to decorate it. Since I participated in this contest at the last moment, I did not get time to get cherries for decoration. So I used jelly chocolates. Next time when I make this, I will get cherries and surely I will have the
KitchenAid chopper with me to make the puree and slices:)
Ingredients: Serves: 5 - 6 people
Time for preparation: 45 minutes
3 eggs
8 tablespoon sugar
2 tablespoons sugar for caramel
1/2 tsp vanilla essence
1/2 tsp nescafe
1 cup milk
10-15 thin slices of plums
4 tablespoon plum puree
For Decoration:
3-4 cherries / 3-4 jelly chocolates
Procedure:
For caramel:
Warm a small flat utensil and spread 2 tablespoon sugar uniformly on it. Let the sugar melt.
Then spread the melted sugar around by slightly shaking the utensil left and right. Let it cool down. When it cools it will become hard.
After it cools and hardens, arrange plum slices over the caramel and keep this aside.
For Pudding:
In another smaller utensil, add eggs and beat them.
Add sugar and stir till sugar dissolves.
Add essence and nescafe. Stir the contents and mix well.
Add cold boiled milk and stir.
Add the plum puree and mix all the contents.
Now spread this over the caramel on top which the plum slices have been arranged. You will notice that some of the slices start floating. Ignore it.
Keep this smaller utensil in a pressure cooker. Place an empty plate at the bottom of the pressure cooker. Fill the pressure cooker with 1 cup water.
Keep the utensil containing pudding mixture on top of the empty plate in the cooker taking care that the water does not enter the pudding mixture.
Switch on the gas and keep it on medium flame.
Switch off the gas after 6-7 whistles.
Take out the pudding from the cooker after it gets cooled. Invert it on a plate and refrigerate.
Serve chilled
Note: The internal utensil which has the caramel and pudding mixture should be smaller in circumference than the cooker, so that it goes in the cooker.
