My Mom taught me to prepare this Drumsticks Subzi during my recent trip to Goa. My Dad being a pure vegetarian, my Mom prepares different types of veg dishes specially for him. My Dad loves this dish. My hubby too loves a lot of vegetarian dishes as they are good for health. This dish is simple to prepare. Drumsticks as you know are very good for health. They are blood purifiers and also give a good glow to the skin.
Adding jaggery and grated coconut is optional. We Goans consume a lot of coconut and hence we add it to a lot of dishes that we prepare here. Some people add chopped tomatoes to this subzi. Green chillies can be replaced by chilly powder. So modify this subzi as per your taste and need and enjoy this with rice or rotis.
Ingredients: Serves: 4, Prep.Time: 20-25 Min's
4-5 Drumsticks
1 medium onion - chopped
2 green chillies
1/4 cup grated coconut
1 tablespoon jaggery
1 tsp turmeric powder
1 tablespoon oil
Procedure:
Peel and cut the drumsticks into 2 inch pieces.
In a pan, fry onions on low flame till they turn pinkish.
Slit the green chilies length wise.
Once they turn pinkish, in an order add green chilies, drumsticks, turmeric powder and grated coconut.
Add water and mix well.
Add salt to taste and cover the pan by a lid. Let this simmer for 10 Min's.
After 10 Min's, open the pan and give a nice stir. Add 1/4 cup water if needed.
Cover the pan and cook for further 10 Min's.
Check if drumsticks are cooked by pressing them slightly.
