Chicken Fried Rice

Fried Rice is one such meal that can complement a host of delectable Chinese gravies. Cooking this meal is also pretty easy if you follow the right set of guidelines. Chicken Fried Rice too is an extremely popular Indo Chinese delicacy that is loved by one and all. So, here’s a complete step by step recipe of this lip smacking meal. Follow these steps and your chicken fried rice will soon be ready within a few minutes.

Ingredients:
Boneless chicken
300 grams of basmati rice
1 cup of frozen peas
1 carrot cut in small dices
2-3 beans cut in small dices
1 small onion, finely diced in small pieces
2 tablespoons of light soya sauce
3 tablespoons of sesame oil
2 eggs

Method of preparation:
In order to prepare chicken fried rice, you have to begin by cooking the rice. Boil the rice with water for 10-15 minutes. After the rice is cooked, drain the water and let it dry.
Now, boil the boneless chicken in a slow cooker for 10 minutes.
Add a dash of salt in the mixture. As soon as the chicken is boiled, cool it and shred it well. In case you find shredding to be a difficult job, you can also purchase pre-shredded chicken for simplifying the procedure. After shredding, heat a pan; add a tablespoon of sesame oil and lightly sauté the chicken. Add a dash of black pepper, salt and oregano to make the shredded chicken tastier.

Now, pre-heat a large wok or pan on a medium flame. Add some sesame oil to it. Right after the oil is heated; add the diced onions, carrots and beans. Sauté them in low heat and add more sesame oil, if the need arises. After tossing the vegetables, keep them in a small bowl.

Right after this, you have to break the eggs and beat them lightly. Heat the wok once again with sesame oil, and add the lightly beaten eggs to it. Use a large spoon or a spatula and scramble the eggs well. Once the egg is well cooked, add the vegetables. Now cook the vegetables with the egg. Make sure that the flame is medium as a relatively high flame, may burn the eggs and veggies.

After cooking the veggies and the eggs for 2-3 minutes, add the rice to the mixture. Cook the rice, vegetables and eggs for 3-4 minutes. Add oil from time to time, and ensure that the rice doesn’t stick to the wok.

Now, add the shredded chicken to the rice and vegetables and cook it on a light flame. Combine the chicken well with the vegetables and cook it for another 3-4 minutes. After this, add a teaspoon of soya sauce on the top. Stir fry the entire thing well. Continue with the sauté until the rice, eggs and veggie mixture are perfectly combined with the light soy sauce. Add some chopped green onions for a Chinese flavor.

Well, your chicken fried rice is now ready. Serve it hot with any Chinese gravy. The meal will taste divine and turn out to be incredibly delectable.
