Healthy Salad With Beet, Carrot, Tomatoes And Onions

month back I had posted that I will be posting atleast one salad recipe per month. I had been making this beet and carrot salad almost everyday. I used to pack this healthy salad in our lunch boxes every other day. But then I suddenly stopped doing salads as I got too busy in my work. OK it's an excuse and I should be saying this. But then again I realized that I can skip doing the oily fries everyday and instead pack salads in our lunch boxes. That's when I took a resolution to eat salads everyday.


I had posted grated carrot salad with chia seeds 2 months back. Last month I was down due to a severe back sprain. I was almost bed-ridden and hence I could not cook lot of things. I just posted things from the drafts. Now I am back on my feet and also continuing with my healthy salads resolution.

My little one has got used to salads. She too has realized the importance of salads in our diet. I had started feeding her with salads since she was 2. Not just salads, I also used to make soups for her and tell her that this is healthy food.



When salads come to mind, I want to share something with you all. In my office we had raised money for charity by bidding our services. I had volunteered to make healthy salads and our service of making salad got sold for Rs.7500/-. This service was bought by the directors in my office and I feel proud that I had served them and they were full of praises for me :) This beet salad is one of the salad recipe which was served to them.

Ingredients:                                            Prep. Time: 10 Min's, Serves: 4
1/2 cup grated carrot
1/2 cup grated beetroot
1/4 cup finely chopped tomato
1/4 cup finely chopped onion
1 tablespoon chopped coriander leaves
4 tablespoon chopped lettuce
1 tablespoon lemon juice
Salt to taste



Procedure:
Mix and toss all the vegetables.
Add the the lemon juice and salt to the vegetables and toss this.
Garnish with chopped coriander leaves.

Note:
Wash all the vegetables properly.
With a peeler, peel the beetroot and carrot. I used a Tupperware peeler for this.
Chop tomatoes and onion as much fine as possible.
