Colostrum Pudding | Poss | Kharwas | Colostrum Recipe

During my last trip to Goa, my mom-in-law made some colostrum milk cake or colostrum pudding. Colostrum is known as Keet in Konkani and the sweet cake or pudding that we make with it is known as Poss. Some people call it Kharwas too. My mom-in-law taught me to make this recipe and today I am sharing this traditional Goan recipe with you all as I don’t want this recipe to be lost somewhere.


Colostrum is the first milky fluid which is produced by cows or buffaloes after a calf is born. As soon as a calf is born, the excess colostrum is removed and is used to make this delicious sweet. Off course, some colostrum is left for the calf too. It is rich in antibodies, proteins, carbohydrates, fat, minerals and vitamins. It also makes the immune system stronger. So if you get some cow’s or buffalo’s colostrum, do try this recipe.

Ingredients:                                      Prep. Time: 30 mins, Serves: 4
1 cup colostrum
½ cup coconut milk
3 tablespoon grated jaggery
1/4 teaspoon cardamom powder/ 5 cardamom pods crushed
1 turmeric leaf (optional)
A pinch of turmeric powder

Procedure:

1) Mix all the Ingredients except turmeric leaf in a deep bottom bowl and stir till jaggery melts.
2) Add the turmeric leaf. Addition of turmeric leaf is optional.
3) Steam / pressure cook it by using the double boiler method.

Note: Double boiler method is similar to steaming idlis where you keep the container with the batter in a pressure cooker in which there is little water. You should not put on the whistle and only steam for 20-30 minutes.
